Once a week, I make the effort to cook up a breakfast beyond cereal. Today, I made strawberry-cherry filled crepes. I debated if strawberries and cherries go well together. My logic was they would because they were the same colours. It worked out in the end. It’s my version of crepes that satisfies my sweet tooth.

(Serves 4)

1 cup all-purpose flour
A pinch of salt
1 tbsp of white sugar
2 eggs
1 cup milk
2 tbsp butter melted

1. Mix flour, salt, and sugar in a bowl
2. In separate bowl whisk eggs, milk, and butter
3. Slowly stir liquid mixture into dry mixture. Whisk till smooth
4. Heat frying pan over high heat
5. Put a small pat of butter to oil pan
6. Pour a ladle of crepe mixture onto frying pan. Shake/circle frying pan to smooth out crepe
7. Flip when bottom is lightly browned. Brown other side as well.

Filling Options

Cherry strawberry filling

1 lb strawberries
1 can cherry pie filling

1. Cut up strawberries
2. Put cherry pie filling and strawberries into sauce pan
3. Simmer over low heat till heated; stir frequently

Apple Cinnamon filling

4 apples
2 tbsp butter
2 tbsp brown sugar
1/4 tsp cinnamon (or desired amount)

1. Dice apples
2. Over med heat, melt butter and sugar
3. Add apples and cinnamon to saucepan
4. Cover and simmer over low-med heat till soft, stir frequently
